We are looking for a highly experienced and creative Executive Chef to join our Ohana. We are seeking a confident, effective and efficient leader with proven success in a commercial kitchen. The Executive Chef motivates and works collaboratively with all kitchen and front end staff, to deliver exceptional dining experiences in Don the Beachcomber, Don's Mai Tai Bar and banquet functions. Responsible for the overall profitability of the kitchen including meeting annual budget goals and sustaining appropriate labor and food cost. The Executive Chef will collaborate on the creation of menu items, in line with our corporate directives.

The ideal candidate is an experienced Manager in the culinary field with a strong working knowledge and a high degree of skill in the following areas: various cooking methods and styles, sanitation standards, kitchen equipment operation and maintenance, control measures including inventory, creation and interpretation of recipes and accurate requisition and waste logs.

A minimum of five years of managerial experience in a culinary position, with a minimum of two years in a hotel/resort kitchen with high volume. Experience with labor relations is strongly preferred.

● Coordinate and direct all food preparation and service.
● Monitor the quality of all food.
● Track, record, and maintain inventory stock including food and kitchen supplies and equipment.
● Delegate daily tasks to sous chef and other kitchen staff; manage their progress throughout the day
● Oversee entire kitchen staff activity and ensure efficient work
● Order and arrange pickup or delivery of foods for the week
● Oversee repairs of kitchen appliances
● Direct and design and plating/presentation techniques for all dishes
● Create new recipes and design overall menu, including specials
● Track food cost and determine pricing for menu items accordingly
● Hire and train new kitchen staff
● Work efficiently to resolve any problems that arise in the kitchen
● Research and implement new culinary trends
● Maintain a clean kitchen and abide by all state food safety and sanitation laws
● TB clearance required.
